Flavor of Texas BBQ brings new tastes to Milledgeville

Flavor of Texas BBQ is located at 800 N. Wayne St. and is open Thursday, Friday, and Saturday.

Charles Fisher began cooking food out of his backyard in Texas in 2008. He was making so much that his wife, Lady, encouraged him to start a business.

His response was if she did all the necessary paperwork, he would do whatever she asked. Charles Fisher preferred to stay focused on cooking because it was something he loved to do. From there, his wife set up everything that had to be done. The next step was getting a trailer.

By 2009, they had acquired their trailer, and the business was beginning to take off. They were doing so well in fact that Fisher was about ready to quit his job at the post office to fully focus on the business. Thankfully, he did not end up doing that, because Lady got sick about three years later and was declared medically disabled as a result. Fisher would run the catering trailer up until the COVID-19 pandemic hit in 2020 and they wound up putting it in storage.

Sometime later in 2021, Fisher’s trailer was stolen. That was the kick in the pants that he needed to follow through on his dream that he had of owning and running a brick-and-mortar business.

After 32 years with the post office and four years with the United States Navy, Fisher finally retired two years ago. This past year, he and his wife paid a visit to Milledgeville and said they “fell in love” with the city. That led to Charles asking if Lady could see herself living in Milledgeville and the moment she said yes, he purchased a home here.

They began pursuing the restaurant dream.

The restaurant dream seemed to be dead in the water from there, because as Charles said, no one in Milledgeville was familiar with the Fishers’ food like the folks in Texas were. Everything changed when the Fishers met Luein Reeves, who had a building in the area and became Charles’ business partner.

Last month, Charles and Lady opened Flavor of Texas BBQ at 800 N. Wayne St. and have gotten a lot of support from people in and outside of the community. The menu features a variety of a la carte items such as smoked brisket, pork, ribs, sausage, and smoked chicken. Customers can even get those items on a sandwich or baked potato. Flavor of Texas BBQ also offers BBQ nachos. Their most popular dish is called the Big Tex, a platter that comes with 4 1/2ounces of brisket, 4 1/2ounces of pulled pork, 4 1/2ounces of sausage, and two pieces of dark chicken. It also comes with a side of corn and green beans.

Everything is made from scratch. This includes the meat, the marinade for the meat, the seasoning, rub, and the barbecue sauce. Fisher said that he has had more people in Georgia that are not fans of barbecue sauce say that his sauce makes the taste of the barbecue better as opposed to masking the taste of poorly-flavored barbecue.

The Fishers agree that the thing they love most about running Flavor of Texas BBQ is when a new customer comes in and then later comes back to tell them that their barbecue was “the best they’ve ever tasted.” It means a lot to them to have been able to open their business here, especially considering they came to a new state where they did not know anyone.

Flavor of Texas BBQ features a pickup window and no on-site seating. It is perfect for those looking to grab a bite on the go or to take home. The business is only open on Thursday, Friday, and Saturday from 11 a.m. to 6 p.m. or 11 a.m. until they are sold out.
