The Cookie Co. opening pop-up shop in Milledgeville Mall

Kaitlin Tollison, owner of The Cookie Company, says she believes that Milledgeville needs a cute, local cookie shop and she cannot wait to fill the void. 

Born and raised in Milledgeville, Kaitlin Tollison has always had a passion for cooking, but in recent years, she’s discovered a love for baking. 

“I love experimenting with new flavors and bringing my ideas to life through baking,” she said.

Tollison started her business, The Cookie Company, as what she called a “Valentine’s treat for family and friends,” and that evolved into something greater than one could have imagined. 

After posting a photo of her cookies and making an Instagram page, Tollison began taking orders from customers. She did the best she could to keep up with the demand that grew locally and participated in local events to grow her brand and product.

The Cookie Company has a menu consisting of classic and specialty cookies, cookie bites and cookie cakes. There are several flavors on the rotating menu including classics like chocolate chip, sea salt toffee and M&M. There are also specialty cookies including cinnamon swirl, cake batter and Oreo birthday cake, among others. The current favorites among customers are the cake batter cookie and the sea salt toffee cookie. 

As demand increased, Tollison began seeing advertisements for the American Dream Project and decided to apply. After several interviews, Tollison received the phone call that she and The Cookie Company had been selected for a pop-up shop for the holiday season. 

“It was a full-circle moment for me and I am extremely grateful and honored to be chosen to serve the people of Milledgeville,” she said.

She said she believes that Milledgeville needs a cute, local cookie shop and she cannot wait to fill the void. 

Both Tollison and The Cookie Company will be popping up in the Milledgeville Mall this holiday season. The grand opening for the business is set for Sept. 29-30. The pop-up term for The Cookie Company will last until the end of December. While the hours have yet to be decided, Tollison says the business will likely be open Tuesday through Saturday. For more details about the grand opening, customers should keep their eyes peeled to The Cookie Company’s Facebook, Instagram and TikTok pages. 

“The storefront is located in the mall next to Belk and Maurices,” Tollison said. “I am creating an inviting atmosphere where shoppers and customers can feel joy as they walk through the doors and happiness when they taste the cookies.”

The shop will offer pickup through its website, thecookiecompanymilly.com. 

“I plan to have a pickup area in the store where customers can pick up their orders. I will also offer delivery for an additional cost,” Tollison said.

Tollison said she is thankful for the support that she and her business have received so far. If not for her amazing customers and supporters, she says, The Cookie Company would not be where it is today.

Before the store opens at the end of the month, Tollison is not only prepping everything but also planning for the grand opening. The hope is that this is only the beginning for the company.

“I can’t say enough how thankful I am for this opportunity,” she said.
